Four o’clock alarms, cold hands and the best part of the job. Here’s what a buying morning looks like.

Twice a week Nell leaves Bath before five and drives to the market. By eight she’s back at the shop with the van full and a flask of coffee half empty.

Buying by eye

We never buy from a list. We look for what’s best that day, which is why our Market Bunch changes every morning.

Local first

From April to October most of what we use is British-grown, and much of it comes from within forty miles of Bath.

The rest of the morning is conditioning: stripping leaves, re-cutting every stem and giving everything a long drink before it goes into a bouquet.
